  • 1 tbsp of gochujang

  • 1 tbsp of gochujang
  • 1 tbsp of soy sauce
  • 2 tbsp of rice vinegar
  • 1 tbsp of sesame oil
  • 1 tbsp of maple syrup
  • 1 spiralized and washed carrot
  • 1/2 purple head thinly sliced cabbage
  • 1 English spiralized and washed cucumber

Instructions

  1. Heat sesame oil in a pot. Saute garlic, scallions, and fresh ginger.
  2. Add vegetable broth, Gochujang sauce, vegetable broth, and soy sauce. Allow simmering.
  3. Prepare the other ingredients – Spiralize the cucumber and carrot. Slice the purple cabbage thinly. Combine all in a pot or bowl and set it aside.
  4. Add gochujang, soy sauce, sesame oil, rice vinegar, and maple syrup with vegetables in a bowl.
  5. Prepare the lotus rice ramen meal using the directions on the package.
  6. Add ramen meal to a bowl and pour the hot broth on the noodles. You can top it with sour and sweet vegetable salad. Finish it up with small spoons of sesame seeds, scallion greens, and kimchi.

2. Spicy ramen noodles

  1. Saute onions for two to three minutes. Then add ginger and garlic. Cook and stir it for about three minutes. 
  2. Add the mushroom and stir cook for another five minutes. While doing this, add your vinegar, cayenne, amino, corn starch, and maple syrup.
  3. After five minutes, add a tablespoon of your vegetable broth. Do this anytime it looks like the mixture needs more moisture.

For the ramen:

  1. On a separate pot, heat the water 
  2. After twelve minutes, add the ramen to the pot of boiling water now and leave to cool for five minutes.
  3. While it is still boiling, keep adding one tablespoon of your broth when necessary.
  4. As soon as the ramen is cooked, remove it from the heat. 
  5. Strain your noodles with a strainer. 
  6. Mix the sauce with your noodles, sesame oil, and broccoli.
  7. Serve your meal with lime, sesame seeds, and green chopped onions.
